Shrimp with Green Salad and Walnut Dressing

The walnut dressing is the star of this salad. It is soooo good! You can choose any variety of toppings for this salad. Easy and delicious! Enjoy!
Ingredients:
For Shrimp:
-2 lbs shrimp, peeled, deveined, with tails removed
-1 tsp salt
-1 tsp pepper
For Dressing:
-1/2 cup walnut halves
-1 lemon, zested and juiced
-1/3 cup extra virgin olive oil
-1 tsp salt
-1 tsp pepper
-6 green onions, roughly chopped
For Salad:
-baby spinach
-avocado
-radishes
-cucumber
-tomatoes
-croutons
-crumbled feta
Directions:
Coat a large skillet with cooking spray and sprinkle with half the salt and pepper. Heat it up. Add the shrimp and season with remaining salt and pepper. Once the shrimp is nice and pink, remove from the stove.
Quickly make the dressing by placing all ingredients in a food processor. Process until nice and smooth.
Assemble the salad by placing all your favorite toppings on top of baby spinach. Top with some shrimp and the yummy dressing. Enjoy!
