Roasted Red Pepper and Potato Soup
This is such a wonderful, simple soup, packed with flavor. The roasted peppers bring such a nice, unique flavor. So yummy! Enjoy!
Ingredients:
-4 Tbs butter
-1 small onion, finely chopped
-2 garlic cloves, minced
-2 Tbs flour
-6 cups chicken broth
-2 lbs potatoes, peeled and cut into chunks
-1 cup heavy cream
-1 (12 oz) jar roasted red pepper, drained and chopped
-1 tsp salt
-1 tsp pepper
Directions:
Melt the butter in large saucepan. Add the onion and cook for about 5 minutes. Stir in the garlic and cook for 1 more minute.
Whisk in the flour and cook for 30 seconds. Once nice and smooth, add the broth. Give it a good stir and bring to a boil. Lower the heat and add the potatoes. Cook for about 15 minutes or until the potatoes are tender.
Add the cream and peppers. Season with the salt and pepper. Give it one more good stir and cook for a couple of minutes.
Ladle into bowls and enjoy!
