Lexie's Swedish Meatballs with Noodles
Ingredients:
For meatballs:
-1 lb extra lean ground beef
-1/2 cup Italian Style bread crumbs
-1 large egg
-1/2 tsp salt
-1/2 tsp pepper
-2 Tbs vegetable oil
For Sauce:
-2 cups beef broth
-2 cups milk (at least 2%)
-1 Tbs Worcestershire sauce
-1/2 tsp salt
-1/2 tsp pepper
For remainder of the dish:
-1 lb medium egg noodles
-1 cup shredded parmesan cheese
Directions:
Make the meatballs by combining the beef, bread crumbs, egg, salt, and pepper. Using your hands, mix everything thoroughly, then shape into small balls.
Heat the oil in pot over medium-high heat. Add the meatballs and cook until browned on all sides.
Add the sauce ingredients. Give it a good stir and bring the mixture to a boil.
Lower the heat and add the egg noodles. Give it a stir and cook for about 8 minutes or until the noodles are cooked and the liquid has thickened.
Remove pot from stove. Stir in the cheese. Scoop onto plates and enjoy!
