Pan Seared Chicken in Creamy Tomato Sauce
This is quick, easy and packed with so many wonderful flavors! We like ours served on top of buttery pasta (simply toss cooked and drained pasta in some butter to keep it from sticking together), but rice will do just fine too. So good! Enjoy!
Ingredients:
-olive oil cooking spray
-4 chicken breasts, skinless, boneless, cut into chunks
-2 tsp salt
-2 tsp pepper
-2 garlic cloves, minced
-2 (14.5 oz each) cans tomatoes with zesty jalapenos, do NOT drain
-1 cup heavy cream
-2 tsp dried parsley leaves
-1 tsp dried basil
-1/2 cup shredded Parmesan cheese, plus more for garnish
Directions:
Generously coat a large skillet with the olive oil cooking spray and heat up. Once hot, toss in the chicken chunks and sprinkle with the salt and pepper. Once the chicken is nicely seared on all sides, add the garlic and cook for 30 seconds. Add the remaining ingredients and give it a good stir.
Bring the mixture to a simmer and continue cooking for 3-4 minutes or until sauce begins to thicken.
Serve immediately over buttery pasta. Sprinkle with some extra Parmesan cheese on top. YUM! Enjoy!
