Instant Pot Spicy-Sesame Chicken
This is another one of those super easy and yummy meals. I love using the instant pot on this because it's quick and minimal mess to clean (just the pot!). Enjoy!
Ingredients:
-4 chicken breasts, skinless, boneless, cut into chunks
-2 Tbs sesame oil
-1/4 cup soy sauce
-1 cup chicken broth
-1 Tbs rice vinegar
-1 garlic clove, minced
-1 tsp ground ginger
-1/3 cup packed brown sugar
-1 tsp red pepper flakes
-2 Tbs water
-2 Tbs cornstarch
-chopped green onions or chives, to garnish
-toasted sesame seeds, to garnish
Directions:
Place in your IP the chicken chinks, sesame oil, soy sauce, chicken broth, vinegar, garlic, ginger, sugar and pepper flakes. Give it a good stir. Secure the top with the vent in the sealed position.
Set to cook on HIGH pressure manual for 5 minutes.
Once done, do a natural release. While that's going, mix the water and cornstarch.
Remove the IP lid and turn off. Set IP to saute and add the cornstarch mixture. Give a stir and cook for about 5 minutes or until the sauce starts to thicken.
Serve this goodness on top of cooked rice and garnish with chopped green onions or chives and sesame seeds. YUM! Enjoy!
