Instant Pot Filipino Adobo Chicken

This is the best dish to make in the IP because it normally requires a long time to cook.  However, the IP cuts that time tremendously and you get to enjoy an insanely delicious dish in a fraction of the traditional time.  YUM!  Enjoy!
Ingredients:
-2 Tbs vegetable oil
-4 chicken thighs, skin-on, bone-in
-5 chicken drumsticks, skin on
-salt and pepper
-1/3 cup soy sauce
-1/4 cup sugar
-1/4 cup white vinegar
-1 tsp garlic powder
-1/2 tsp pepper
-1 large onion, halved and sliced
-2 bay leaves
-chopped green onions, for garnish
-cooked rice, for serving
Directions:
Place IP on saute mode.  Add the oil and let it heat up. Generously season both sides of all chicken pieces with salt and pepper.  Brown (in batches) in the hot IP. 
While the chicken is browning, in a small bowl combine the soy sauce, sugar, vinegar , garlic powder and pepper.  Mix well. 
Turn off the IP. Leave the chicken in the pot and pour sauce on top of it. Add the onion and bay leaves.
Secure the lid on the pot, with the vent in the seal position. Set to manual on high pressure for 8 minutes.  Do a natural release, then a quick release to get the remaining pressure out.
Remove the lid and press the saute setting.  Continue cooking for 20 minutes.  The sauce will boil and become darker and thicker, absolutely perfect for this dish.
Serve pieces of chicken on top of cooked rice, with some sauce on the top and chopped green onions, YUM!  Enjoy!
