Chocolate Banana-Peanut Butter Mini Muffins

This is a huge favorite at our house. These little nuggets of yumminess are light, filling and super delicious.  The plus is that there's no flour or sugar in them, but you will never taste the difference. Enjoy!
Yields about 20 mini muffins
Ingredients:
-2 ripe bananas, peeled
-1/2 cup creamy peanut butter
-1 large egg
-1/3 cup unsweetened cocoa powder
-3 Tbs honey
-1 Tbs vanilla extract
-1/4 tsp baking soda
-1/4 cup semi sweet chocolate chips
Directions:
Preheat oven to 400 F.  Line a mini muffin pan with paper liners.  Set aside. 
In your blender, add all ingredients, except for the chocolate chips.  Process until mixture is nice and smooth.
Carefully, fill the prepared pan, so that each liner is 3/4 full.  Put about 6 chocolate chips in each muffin.
Bake in preheated oven for 10-11 minutes. Remove from oven and let cool in pan, on wire rack, for 10 minutes. Carefully remove from pan and place the muffins on the wire rack to cool completely.  Enjoy!
