I have to admit that I have an avocado addiction! I absolutely love to eat avocado. This dish is totally down my alley. If you love avocado, this is totally for you. It's light, creamy and absolutely delicious! Enjoy!
-12 oz spaghetti
-3 ripe avocados, pitted and flesh scooped
-2 Tbs lime juice
-1 Tbs dried parsley
-1 clove garlic
-1/3 cup olive oil
-salt and pepper, to taste
-Tabasco sauce, to taste (a few shakes)
Cook pasta in salted water, according to package directions.
Meanwhile, place avocados, lime juice, parsley and garlic in your food processor. Process until smooth. Add the oil, salt, pepper and Tabasco. Mix until well blended and creamy.
Once pasta is done, drain well. Pour avocado sauce on top of pasta and mix well, using tongs, until evenly coated. Enjoy!
