-1 lb extra lean or lean ground beef
-1 small head cabbage, roughly chopped
-3 cups chicken broth
-1 small onion, finely diced or 2 Tbs dehydrated onion
-1 (14.5 oz) can petite diced tomatoes, undrained
-3 Tbs tomato paste
-1 1/2 tsp salt
-1 tsp pepper
-3 Tbs balsamic vinegar
-2 Tbs packed brown sugar
-plain yogurt or sour cream to garnish, if desired
Brown the beef, drain and place in slow cooker. Add remaining ingredients, except yogurt/sour cream. Give it a good stir, cover and cook for 6-7 hours on low.
Ladle into bowls, top with yogurt/sour cream, if desired and enjoy!
