Strawberry-Shrimp Salad
This is so refreshing and has a nice kick to it. You can omit the hot pepper, if you don't want anything spicy, but it's such a nice balance between that and the sweetness of the strawberries. Enjoy!
Ingredients:
-zest and juice from 1 orange
-juice from 2 small limes
- 1 shallot, halved and sliced
-1 serrano or jalapeno pepper, seeded, halved, and sliced
-12 oz cooked small shrimp, peeled, deveined, with tails removed
-1/2 English cucumber, halved, then sliced
-1/2 lb strawberries, hulled and sliced
-1 avocado, pitted and cut into chunks
-salt and pepper, to taste (start with 1/2 tsp each)
-1 Tbs extra virgin olive oil
Directions:
In a large bowl, mix together the zest and juice from the orange with the juice from the limes, sliced shallot and serrano/jalapeno pepper. Give it a good stir and let it sit for 5-10 minutes, allowing the flavors to blend.
Stir in the remaining ingredients. Give it a good stir and serve right away. YUM! Enjoy!
