Slow Cooker Pork in Puttanesca Sauce
This is a great dish for a crazy, busy night. We like ours on top of freshly cooked spaghetti, but you can serve it as is with some yummy crusty bread. So flavorful, so good! Enjoy!
Ingredients:
-6 garlic cloves, minced
-1 (14 oz) can fire roasted chopped tomatoes
-1/4 cup capers, drained
-1 (1.6 oz) tube anchovy paste
-1 tsp crushed red pepper flakes (or more if you want more heat)
-1 tsp salt
-1 tsp pepper
-3 lbs boneless pork shoulder, trimmed of large pieces of fat, if needed
-1 cup kalamata olives, pitted
Directions:
Coat your slow cooker with cooking spray. Add the garlic, tomatoes, caper, anchovy paste, pepper flakes, salt, and pepper. Give it a very good stir. Add the pork and scoop up some of the sauce to cover the top of it. Top with the olives.
Cover and cook on LOW for 10 hours.
Shred the pork and serve on top of spaghetti or with some yummy bread. Enjoy!
