Slow Cooker Black-Eyed Pea Soup
This soup is pure comfort food. The flavors are out of this world! Every bite is simply amazing. So, so delicious! If you can't find ham hocks, just substitute with boneless pork and liquid smoke to keep that yummy flavor. Enjoy!Ingredients:
-1/2 lb thick cut smoked bacon, cut into chunks
-1 onion, finely chopped
-2 garlic cloves, minced
-2 1/2 lbs smoked ham hocks
-3 (15 oz each) cans black eyed peas, drained
-5 cups chicken broth
-2 tsp salt
-2 tsp pepper
-1/2 tsp chili powder
-a dash of hot sauce
-6 oz baby spinach, roughly chopped
Directions:
In a skillet, brown the bacon chunks. When almost done, add the onion and garlic. Give it a good stir and cook for about 3 minutes. Transfer the whole thing to your slow cooker.
Add the ham hocks, peas, broth, and spices. Give it a good stir. Cover and cook on LOW for 8 hours.
Remove the lid and shred the ham hocks. Add the spinach pieces, stir and place the lid back on. Let it sit for 10 minutes, allowing the spinach to wilt a little.
Ladle that goodness into bowls and enjoy! YUM!
