Cream of Broccoli Soup

Quick and delicious! You can use either fresh or frozen broccoli for this one. The flavors are great and the soup is filling. Enjoy!
Ingredients:
-5 Tbs butter
-1 onion, chopped
-1 large carrot, peeled and shredded (on the largest setting)
-3 Tbs flour
-3 cups chicken broth
-8 cups broccoli florets (fresh or frozen)
-1 cup milk
-1 cup heavy cream
-2 tsp salt
-2 tsp peper
-Parmesan cheese, for topping
-bacon bits, for topping
Directions:
Melt the butter in a large pot. Add the onion and carrot. Saute for 5-7 minutes, until the veggies are nice and soft. Sprinkle the flour and give it a stir. Cook for 1 minute. Add the broth and broccoli. Give it a good stir. Bring to a simmer and let it cook for about 15 minutes.
Using an immersion blender (or working in batches with a regular blender), puree the soup.
Stir in the milk and cream. Season with the salt and pepper.
Ladle into bowl and top with the cheese and bacon bits.
