Pasta with Walnut-Blue Cheese Sauce

The blue cheese is the star of this dish. It is unique and delicious. Make sure to serve it warm, as the flavors tend to pop more. This wonderful side dish is perfect with some grilled meat and a green salad. So good! Enjoy!
Ingredients:
-1 lb small pasta (shells, rotini, etc) cooked and drained
-1 cup ricotta cheese
-1/2 cup vegetable or chicken broth
-zest from 1 small lemon
-1 cup chopped walnuts
-1 1/2 cups crumbled blue cheese
-salt and pepper, to taste
Directions:
In a large bowl, whisk the ricotta with the broth and zest. Once smooth, add the drained warm pasta. Mix well, then add the walnuts, blue cheese, salt, and pepper. Give it a good stir, then adjust the salt and pepper, if needed.
