Chicken Pistachio-Basil Pesto Sandwich

Oh, the flavors in this sandwich! Everything is super delicious and melts in your mouth. Don't skimp on the fresh whole milk mozzarella. It makes quite a difference in this. Also, you can use basil pesto, but the pistachio-basil pesto elevates the sandwich to a different level. And use ciabatta rolls. So, so good! I am sharing the ingredients for one sandwich, but feel free to make as many as you'd like. Enjoy!

Ingredients:
For one sandwich:
-1 ciabatta roll, cut in half
-2 Tbs pistachio-basil (or just basil ) pesto
-1 Tbs mayonnaise
-thick slices of fresh whole milk mozzarella cheese
-chicken breast, grilled with a little seasoning on it OR rotisserie chicken
-bacon slices, cooked
-spring greens mix
-sliced good tomatoes
-salt and pepper
Directions:
Preheat oven to HIGH broil.
Place your ciabatta roll halves on a baking sheet, with the crust down.
Mix the pesto and mayo. Spread on both halves of the roll. Top each half with thick mozzarella slices .
On the bottom half, add the chicken on top of the cheese. Top with a couple of bacon slices, a bit of the spring green, and a couple of tomato slices. Sprinkle some salt and pepper on top of the tomatoes.
Broil in preheated oven for 3 minutes.
Place top roll on top of the tomatoes and enjoy! YUM!
