Easy Shrimp and Veggies
Super easy, fresh and hearty. So yummy! Enjoy!
For shrimp:
-1 lime, juiced
-2 Tbs extra virgin olive oil
-2 garlic cloves, minced
-1 tsp salt
-1 tsp pepper
-1 Tbs chili seasoning
-1 Tbs paprika
-1/2 Tbs ground cumin
-2 lbs large shrimp, peeled, deveined with tail removed
For veggies:
-1 Tbs extra virgin olive oil
-1 small red onion, quartered and sliced
-1 zucchini, halved and sliced
-1 yellow squash, halved and sliced
-1 red bell pepper, sliced
Directions:
Place all shrimp ingredients in large bowl and mix very well. Set it aside.
While the shrimp is marinating in that goodness, prep the veggies.
Heat oil in large skillet or wok. Add the veggies and saute until golden brown and they start getting tender, about 7 minutes. Remove veggies from skillet and set aside.
Return skillet to stove and add the shrimp with all the juices and marinade. Cook for a couple of minutes or until cooked through. Return veggies to skillet and give it a good stir. Cook for a couple of minutes.
Serve immediately on top of cooked rice. Enjoy!
