Instant Pot Lemon Chicken with Kalamata Olives
Another quick, easy and delicious dish. I served ours with rice and it worked perfectly. The flavors are wonderful and the chicken melts in your mouth. So good!
-olive oil flavored cooking spray
-5 chicken thighs, skin-on, bone in
-salt and pepper
-1/4 cup cooking sherry wine
-1/2 cup chicken broth
-1 lemon, juiced and zested (keep only 1/4 cup of the lemon juice)
-1 lemon, thinly sliced
-1 cup Kalamata olives, pitted
Directions:
Generously coat the bottom of your IP with the olive oil cooking spray. Turn on saute.
Season the chicken on both sides with salt and pepper. Once your IP is hot, add the chicken and quickly brown on both sides. Add the wine and cook for about 3 minutes,
Turn off the IP. Add the broth, lemon juice and zest, lemon slices, and olives.
Cover and secure the lid on top with the valve in the sealed position. Cook on HIGH manual pressure for 20 minutes.
Do a quick release and enjoy!
