Instant Pot Andouille Sausage and Potato Soup
Easy, quick and super delicious! The Andouille sausage gives this soup such a nice, smoky flavor, with the perfect amount of kick. Super good! Enjoy!
-12 oz Cajun style Andoille sausage, sliced
-3 cups vegetable broth
-2 cups milk
-3 potatoes, peeled and cut into chunks
-12 oz frozen corn
-1 Tbs dried chopped onion
-1 large garlic clove, minced
-1/2 tsp salt
-1/2 tsp pepper
-1 cup sour cream
-2 cups grated cheddar cheese
Directions:
Coat the bottom of your IP with cooking spray and heat it up. Once hot, add the sausage slices and quickly brown them on both sides.
Turn off the IP. Add the broth, milk, potatoes, corn, onion, garlic, salt, and pepper. Give it a good stir. Cover and set the valve in the sealed position. Set to soup for 10 minutes.
Do a quick release. Stir in the sour cream and cheese. Once well combined, ladle into bowls and enjoy!
