Loaded Upside-Down Cornbread
This is soooo good! This cornbread is packed with so many goodies, like bacon, cheese, veggies. I made ours in a wok, but any large saucepan or dutch oven works just as well. So yummy! Enjoy!
Ingredients:
-1 lb bacon, chopped and cooked until nice and crisp (reserve 1 Tbs of the grease)
-1 red bell pepper, diced
-1 bunch green onions, cleaned and diced
-2 large eggs
-1 (15 oz) box cornbread mix (we prefer Famous Dave's)
-1 cup milk
-1 (4.5 oz) can diced green chiles
-2 cups shredded sharp Cheddar cheese
Directions:
Preheat oven to 350 F.
Cook chopped bacon in a wok until nice and crisp. Remove onto paper towel lined plate, reserving 1 Tbs of the grease.
Cook pepper and onions in bacon grease for 2 minutes. Remove from stove.
In a large bowl, mix the eggs, cornbread mix, milk, chiles, cheese, and cooked bacon. Mix very well, then pour on top of the veggies.
Bake in preheated oven for 40-45 minutes or until toothpick comes out clean.
Remove from oven and let it sit for 10 minutes. Place plate over wok and carefully flip oven. Slice and enjoy! YUM!
