Baked Lemon Chicken and Rice
Ingredients:
For marinade:
-2 garlic cloves, smashed
-2 tsp ground ginger
-2 tsp pepper
-2 cups water
-1/2 cup soy sauce
-1/4 cup lemon juice
-1/4 cup extra virgin olive oil
For dish:
-5 lbs chicken pieces (thighs, legs, wings, etc)
-2 cups rice
-1 lemon, sliced
Directions:
In a gallon size resealable bag, combine all marinade ingredients. Mix well, then add the chicken pieces. Make sure they're all covered, then refrigerate for 4 hours or overnight, flipping the bag on the other side at least one time.
Preheat oven to 375 F.
Coat the bottom and sides of 9x13 baking dish with cooking spray. Layer the rice on the bottom. Pour marinade on top of rice. Give it a good stir so that all the rice is covered in liquid. Place chicken parts on top of rice. Top with sliced lemons.
Cover with foil and bake in preheated oven for 1 hour. Remove foil and bake for another 30 minutes or until chicken is cooked through.
Quickly broil on HIGH for 2 minutes.
