Scotch Eggs

My kids and I were watching this cool cooking show called The Final Table and one of the teams made Scotch Eggs. Let's just say that it was love at first sight. We knew that we had to make them. It takes a bit to put them together, but every second spent it's so well worth it. These things are AMAZING!  So rich, flavorful, and hearty! Since our family is big, I made a big batch, but you can totally half this. They are soooo good! Absolutely delicious!  Enjoy!
Ingredients:
-13 eggs, divided
-2 lbs sage sausage, divided into 10 patties
-vegetable oil for frying
-1 cup flour
-2 cups Italian-style Panko crumbs
-yellow mustard for dipping
Directions:
Place 10 of the eggs in pot of cold water. Place on stove and bring to a boil. Once boiling, remove pot from stove, cover, and let it sit for 3 minutes.
Drain water and fill the pot with cold water. Once the eggs are cold, gently peel them.  Let them cool completely.
Flatten the sausage patties and place one egg in the middle of each. Carefully, wrap the sausage around the eggs. This will yield 10 sausage-egg balls.
Heat up the oil for frying.
Place flour in shallow bowl. Beat the remaining 3 eggs into another shallow bowl. In a third bowl, pour the Panko crumbs.
Gently, roll each ball into flour, then dip in the eggs, then roll through the crumbs.
Place in hot oil and deep fry for about 5-6 minutes on each side, until golden brown and sausage is cooked through.
Once done, drain eggs on paper towels. Serve immediately with yellow mustard. Enjoy!
