Lexie's Sweet and Sour Meatballs
This dish is absolutely delicious! It's simple and super tasty. The meatballs are tender and flavorful, and the sauce is finger licking good. YUM! Enjoy!
Ingredients:
For Meatballs:
-1 lb extra lean ground beef
-2/3 cup seasoned bread crumbs
-1 Tbs dried onion
-1 large egg
-1/2 tsp salt
-1/2 tsp ground ginger
-4 Tbs milk
For Sauce:
-2 Tbs cornstarch
-2 Tbs cornstarch
-1/2 cup packed brown sugar
-4 Tbs apple cider vinegar
-1/2 cup crushed pineapple, drained
-2/3 cup pineapple juice (from drained pineapple)
-3 Tbs soy sauce
Directions:
Place all meatball ingredients in a large bowl. Using your hands, mix very well, then shape into bowls.
Fry until golden brown and place on paper towels to drain.
Place in large skillet.
In a separate bowl, combine all the sauce ingredients. Once well mixed, pour over the meatballs, over medium heat. Cook until boiling and thickened, about 3 minutes.
Serve over cooked rice. Enjoy!
