Blueberry-Corn Salad

This is a fantastic combination of flavors and it can go as a side dish to any protein you choose. The other nice thing is that you can make it year round. So delicious! Enjoy!
Ingredients:
-2 (15 oz each) cans corn, drained
-butter flavored cooking spray
-2 cups blueberries
-1 bunch green onions, cleaned and finely chopped
-3 oz feta cheese, freshly crumbled (buy a block and crumble it yourself)
-3 Tbs extra virgin olive oil
-freshly squeezed juice from 1 lemon
-1 tsp dried. dill
-1/2 tsp salt
-1/2 tsp pepper
Directions:
Coat a skillet with butter flavored cooking spray. Add the drained corn and roast it for a few minutes. Let it cool and add it to the salad bowl.
Add remaining ingredients. Give it a good stir. Cover and let it sit for about 1 hour before serving, allowing the flavors to blend. Serve and enjoy! YUM!
