Roasted Kielbasa and Pierogis

 This is super simple and so delicious. A hearty meal for a busy night. Enjoy!
Ingredients:
-2 (14 oz each) Polska Kielbasa, cut into large chunks, then halved
-2 large onions, quartered, then sliced
-2 large bell peppers (any color), cut into strips
-2 lbs 4 cheese pierogis
-olive oil flavored cooking spray
-1/2 tsp garlic powder
-1/2 tsp onion powder
-1 tsp salt
-1 tsp pepper
-1 Tbs chili powder
-your favorite hot sauce (Tabasco or other brand)
Directions:
Preheat oven to 400 F.
Generously coat a large baking sheet with the olive oil spray. Sprinkle evenly with half of the spices and a few shakes of the hot sauce. Top with the sausage, onions, peppers, and pierogis. Season with remaining spices and a few more shakes of the hot sauce. Give it a stir and make sure it's all in one single layer. Cover with foil and roast for 20 minutes in preheated oven.
Remove foil, give the dish another good stir and continue roasting, uncovered for another 10 minutes.
Leaving the baking sheet in the oven, switch from bake to HIGH broil. 
Broil for 2-3 minutes or until nice and golden brown on top.
Serve immediately. Enjoy!
