Tilapia Poached in Tomato Sauce with Olives and Capers

 Yes, that's a mouthful, but it's serious comfort food. Of course, I like to serve it with fresh mamaliga (cornmeal mush). So, so delicious! Enjoy!
Ingredients:
-2 Tbs extra virgin olive oil
-2 garlic cloves, minced
-1 Tbs capers, rinsed
-1 tsp lemon zest
-3/4 cup red cooking wine
-1 lb Roma tomatoes, roughly chopped
-1/4 cup Kalamata olives, pitted and halved
-1/4 tsp salt
-1/4 tsp pepper
-4-5 tilapia fillets
-chopped parsley
Directions:
Heat oil in large skillet. Add the garlic, capers, and zest. Give it a good stir and cook for 30 seconds. 
Add the wine and simmer for a couple of minutes. Stir in the tomatoes, olives, salt, and pepper. Mix well and bring to a simmer. Nestle the tilapia fillets in the sauce and cook for about 5 minutes. Cover and continue cooking for another 3 minutes or until the fish is cooked through. 
Serve immediately on top of mamaliga, with a sprinkle of chopped parsley. YUM! Enjoy!
