Mango, Avocado, and Shrimp Salad

 This is such a nice and refreshing salad! The flavors are fantastic together and the dressing brings it all together. So yummy! Enjoy!
Ingredients:
For shrimp:
-1 Tbs extra virgin olive oil
-12 oz medium shrimp, peeled deveined, with tails removed
-2 tsp chili powder
For dressing:
-zest and juice from one large lime or 2 small
-2 Tbs extra virgin olive oil
-2 tsp sugar or honey
-1 small jalapeno, seeded and finely chopped
-a pinch of salt
For salad:
-salad greens
-1 large mango, peeled and diced
-1 avocado, pitted and diced
-1 shallot, thinly sliced
Directions:
Heat the oil for shrimp in a large skillet. When hot, add the shrimp and season with the chili powder. Mix very well and cook until no longer pink on both sides. Remove from the heat.
Quickly mix all dressing ingredients. Whisk until well combined.
Assemble your salad by putting some salad greens in your bowl, followed by some mango, avocado, shallot, and shrimp. Drizzle a generous portion of the dressing on top. Mix well and enjoy. YUM!
