Fish and Veggies Foil Packs

 This is super easy and very delicious (and nutritious). Tilapia works great for this, but any mild flavored fish will do. The spinach is a perfect addition, while the shallots give it such a nice, sweet flavor. This is a wonderful dish. Enjoy!
Ingredients:
-olive oil cooking spray
-salt and pepper
-6 oz baby spinach
-5 tilapia filets
-1 lemon, cut int half
-garlic powder
-2 shallots, sliced
Directions:
Preheat oven to 475 F.
On an aluminum foil rectangle, generously spray some of the olive oil, then sprinkle with salt and pepper (be generous with your spices on this). Top with a handful of spinach. Spray the top of the spinach with oil and season with salt and pepper. Top with one filet of fish. Spray the top of the fish with oil, then squeeze some of the fresh lemon on top. Season with salt, pepper, and garlic powder. Top with a few slices of shallots.
Carefully close the foil tightly and place on a baking sheet.
Repeat with remaining fish.
Once all packs are done, bake in preheated oven for 15 minutes.
Carefully open the packs (be careful with the steam) and enjoy! YUM!
