Easy Pasta Puttanesca

 There are quite a few versions of this delicious dish and here's mine. It's easy, with a little kick. I also do it all in one dish (less to wash) and I love the flavor combo. Enjoy!
Ingredients:
-2 Tbs extra virgin olive oil
-1 (2  oz) can flat anchovies, drained and roughly chopped
-2 cloves garlic, minced
-1/2 tsp crushed red pepper flakes
-1 (14.5 oz) can petite diced tomatoes
-1 (28 oz) can crushed tomatoes
-2 cups red cooking wine
-1 cup water
-salt and pepper (start with about 1/4 tsp each)
-1 1/4 cups kalamata olives, pitted and halved
-2 Tbs small capers, rinsed very well and drained
-1 lb spaghetti, broken in half
-parsley, for garnish
Directions:
Heat up oil in wok or large pot. Add the anchovies, garlic, and pepper flakes. Give it a good stir and cook for 30 seconds. Add the diced tomatoes, crushed tomatoes, wine, water, salt and pepper, olives and capers. Give it a good stir and simmer for 10 minutes.
Sprinkle the pasta on top and mix a little (the pasta will be stiff at this point). Cover and cook for 12-15 minutes, stirring occasionally and until pasta is tender.
Serve immediately and garnish with some parsley. Enjoy!
