Sesame Chicken and Veggies Stir Fry

 Easy and absolutely delicious, this dish is packed with so much flavor. The veggies have a nice crunch to them and the flavors blend perfectly together. We like ours with some yummy brown rice. Enjoy!
Ingredients:
-3 chicken breasts, skinless, boneless, cut into chunks
-1.5 Tbs grape seed oil (vegetable works ok, too)
-1/2 Tbs sesame oil
-2 red bell peppers, seeded and cut into chunks
-2 zucchinis, cut into chunks
-black sesame seeds, for garnish
For marinade:
-1/3 cup soy sauce
-2 Tbs rice wine vinegar
-2 Tbs maple syrup
-1 Tbs sesame oil
-1/2 tsp garlic powder
Directions:
Combine all marinade ingredients in resealable plastic bag. Mix well, then add the chicken chunks to it. Make sure that the chicken is coated evenly.
Place in the fridge and let it marinade for at least 4 hours.
When ready to have dinner, heat both grape seed oil and sesame oil in a wok or large skillet. 
When the oil is hot, add the chicken (discard the marinade). Stir fry for 10 minutes or until chicken is cooked through.
Add the veggies and cook for another 5 minutes.
Serve immediately on top of brown rice and garnish with black sesame seeds. YUM! Enjoy!
