Instant Pot Spicy Bean and Spinach Soup

 This soup is perfect on a cold winter day. The flavors are wonderful, the soup is tasty and hearty, and the beans don't need any soaking. Enjoy!

Ingredients:
-1.5 Tbs extra virgin olive oil
-2 large garlic cloves, minced
-1/2 tsp crushed red pepper flakes
-6 cups chicken or vegetable broth
-1 bay leaf
-1 cup dried beans (pinto, white, great northern, etc) picked and rinsed
-6 oz baby spinach, roughly chopped
-1/2 cup shredded Parmesan cheese
Directions:
Heat IP on saute. When hot, add the oil, garlic, and pepper flakes. Give it a good stir and cook for 30 seconds. 
Turn off the IP and stir in the broth, bay leaf, and beans. Give it a stir.
Secure the lid on top, with the valve in the sealed position. Set to soup for 1 hour.
Do a quick release. Remove the bay leaf. Using a potato masher, mash the beans a little. Finally, stir in the spinach and cheese.
Ladle into bowls and enjoy!
