Blackberry Bread

My husband's uncle gave us these beautiful blackberries that he had frozen. I immediately knew that I wanted to make blackberry bread. It came out so nice, moist and absolutely delicious! Enjoy!
Recipe yields 2 large loaves
Ingredients:
-1.5 cups sugar
-4 large eggs
-3/4 cup vegetable oil
-1 tsp salt
-1 tsp baking soda
-1 tsp cinnamon
-2 cups blackberries and their juice (if frozen, thaw before using)
-3 cups flour
Directions:
Preheat oven to 350 F. Coat bottom and sides of 2 large loaf pans with baking spray (the one with flour and butter). Set aside.
Cream together the sugar, eggs, and oil. Once well mixed, add the salt, baking soda, cinnamon, and blackberries. Mix very well. Add the flour, half of cup at a time. Once very well mixed, divide the batter evenly between the 2 prepared pans.
Bake in preheated oven for 55 minutes or until toothpick comes out clean.
Cool on rack in the pan for 15 minutes. Carefully, remove bread from pans and continue cooling on rack. 
Slice and enjoy!
