Slow Cooker Beef and Ramen Soup

So easy, so flavorful, so hearty! This is balm for the soul on a cold winter's day. Enjoy!
Ingredients:
-2 garlic cloves, minced
-1 inch fresh ginger, peeled and grated
-6 cups beef broth
-1/4 cup low sodium soy sauce (it will be too salty with regular soy sauce)
-1 Tbs oyster sauce
-1 tsp sesame oil
-1 Tbs packed brown sugar
-1/2-1 tsp crushed red pepper flakes (depends how much heat you want)
-1 bunch green onions, chopped and separated into whites and greens
-2 lbs chuck roast, cut into bite-sized chunks
-2 carrots, largely shredded
-1 red bell pepper, sliced
-3 packages ramen noodles (discard flavor packets)
-soft boiled eggs, for garnish
-black and white sesame seeds, for garnish
Directions:
In your slow cooker, combine the garlic, ginger, broth, soy sauce, oyster sauce, sesame oil, sugar, pepper flakes, white part of the onions, and beef. Give it a good stir, cover and cook on LOW for 8 hours. Leave the slow cooker on the "keep warm" setting.
Add the carrots and bell pepper. Mix well and let it sit for 30 minutes.
Break the ramen noodles and add to the slow cooker. Let it sit for 3 minutes.
Finally, ladle into bowl, top with halved soft boiled eggs, sprinkled with some sesame seeds and the green parts of the onions. Enjoy! YUM!
