Slow Cooker Bean and Quinoa Chili

Easy, hearty, and delicious! This chili is packed with flavor and is super filling. You can add toppings like cheese and bacon bits, but it's absolutely amazing just as is. Enjoy!
Ingredients:
-1 small onion, finely chopped
-4 garlic cloves, minced
-1 jalapeno, seeded and minced (keep the seed if you want more heat)
-1 cup quinoa
-1 (8 oz) can diced green chiles
-2 (15 oz each) cans cannellini beans (do not drain)
-1 cup frozen corn kernels
-4 cups chicken or vegetable broth
-juice from 1 lime
-1 Tbs cumin
-2 tsp salt
-1 tsp pepper
-1/2 tsp dried oregano
-1 bay leaf
Directions:
Add all ingredients to slow cooker. Cover and cook on LOW for 6 hours. Remove bay leaf, serve, and enjoy! YUM!
