Roasted Beef and Cabbage Steaks
Lower in calories and packed with flavor, these steaks are a perfect meal. They're fairly quick to put together and pretty hearty. So good! Enjoy!
Ingredients:
-olive oil flavored cooking spray
-salt and pepper
-1 large cabbage head, cut into 1 inch slices
-1/2 cup tomato sauce
-1 lb extra lean ground beef
-1/2 tsp garlic powder
-1/2 tsp crushed red pepper flakes
-1/2 bunch of green onions, minced
-1 tsp dried parsley flakes
-1/2 cup shredded cheddar cheese
-1/2 cup shredded mozzarella cheese
Directions:
Preheat oven to 400 F. Coat the bottom of a cooking sheet with olive oil spray. Sprinkle with salt and pepper. Place the cabbage steaks on top and coat with some cooking spray on top. Sprinkle with salt and pepper. Roast in preheated oven for 10 minutes.
Remove the cabbage from the oven (do not turn the oven off!) and top with some tomato sauce on top.
In a large bowl, mix together the beef, 1 tsp salt, 1 tsp pepper, garlic powder, red pepper flakes, minced green onions, parsley, 1/4 cup of the cheddar cheese, and 1/4 cup of the mozzarella cheese. Mix very well together. Shape into flat patties and place on top of the cabbage steak topped with tomato sauce.
Sprinkle remaining cheese evenly on top of the beef patties.
Return sheet to the oven and roast for 15-17 minutes or until the beef is cooked through.
