Creamy Bean Soup
This is such a heartwarming delight, especially during the colder months. The beans are nice and hearty. All the flavors are perfectly combined in this delicious soup. Enjoy!
Ingredients:
-1 Tbs extra virgin olive oil
-3 garlic cloves, minced
-1 onion, finely chopped
-6 cups vegetable broth
-4 (15 oz each) cans white cannellini beans, drained and rinsed
-1 cup heavy cream OR half and half
-1/2 cup shredded Parmesan cheese
-1 tsp salt
-1 tsp pepper
-chives, to garnish
Directions:
Heat oil in pot. Stir in the garlic and onion. Cook for 4-5 minutes. Pour in the broth and give it a good stir. Add the beans and bring to a simmer. Simmer for 5 minutes. Using a potato masher, mash the beans to your liking (I like it a bit more on the chunky side). Stir in the cream, cheese, salt, and pepper. Give it one more stir. Ladle into bowls and garnish with chives. YUM! Enjoy!
