Hearty Chicken-Mushroom Soup
This is the perfect way to use any rotisserie chicken you might have left. The flavors are wonderful in this simple, yet hearty soup. So very delicious! Enjoy!
Ingredients:
-1.5 Tbs butter
-1.5 Tbs extra virgin olive oil
-1 onion, finely diced
-4 garlic cloves, minced
-1/2 tsp dried thyme
-1/2 tsp red crushed pepper flakes
-1 lb baby bella mushrooms, roughly chopped
-6 cups chicken broth
-1 cup heavy cream
-3 cups boneless rotisserie chicken, torn into chunks
-6 oz baby spinach
-2 tsp salt
-2 tsp pepper
-a splash of lemon juice
Directions:
Melt the butter in large pot. Add the oil and heat up. Stir in the onion and cook for 3-4 minutes or until nice and soft. Add the garlic, thyme, and pepper flakes. Give it a good stir and cook for 30 seconds.
Add the mushrooms and cook for a couple of minutes or until they start to soften.
Stir in the broth and cream. Mix very well and simmer for 5 minutes.
Add the chicken chunks and spinach. Mix well and cook for another 5 minutes. Season with the salt, pepper, and lemon juice. Mix well and cook for a couple more minutes.
Ladle into bowls and enjoy! Yum!
