Saucy Steak and Peppers
This is such a delicious dish! The flavors combine beautifully and everything melts in your mouth. You can serve it over rice or as is with some fresh bread to dip into the yummy sauce. Super delicious and easy. Enjoy!
Ingredients:
-2 Tbs butter
-2 lbs beef chunks
-1.5 Tbs smoked paprika
-2 garlic cloves, minced
-3 cups beef broth
-2 green bell peppers, seeded and cut into strips
-1 large onion, halved and sliced
-4 Tbs cornstarch
-4 Tbs low sodium soy sauce
-2/3 cup water
-2 large tomatoes, cut into thin wedges
Directions:
Melt butter in large skillet or wok. Add the beef and season with the smoked paprika. Give it a good stir and cook until beef is nicely browned.
Add the garlic and cook for 30 seconds. Pour in the broth. Mix well and bring to a simmer. Lower the heat, cover, and simmer for 30 minutes, stirring occasionally.
Stir in the bell peppers and onion. Give it a good stir, cover and simmer for 5 more minutes.
In a small bowl, combine the cornstarch, soy sauce, and water. Add to the skillet/wok. Mix well and cook for about 1 minute or until thickened.
Gently stir in the tomatoes and cook for 1-2 minutes.
