Orzo-Veggie Salad

 So fresh and so delicious! The flavors are absolutely amazing in this simple salad. It's also quite filling. So good! Enjoy!
Ingredients:
-1 cup uncooked orzo
-10 oz cherry tomatoes, halved
-1 yellow or orange bell pepper, cut into strips
-1/2 English cucumber, halved lengthwise and sliced
-1 large shallot, halved and sliced
-1/2 cup whole pitted kalamata olives
-4 oz block good feta cheese 
-3 Tbs extra virgin olive oil
-1 tsp grated lemon zest
-2 Tbs freshly squeezed lemon juice
-1 Tbs red wine vinegar
-1/2 tsp salt
-1/2 tsp pepper
Directions:
Cook the pasta according to package directions. Drain, rinse with cold water, drain again and place into salad bowl. 
Add the tomatoes, bell pepper, cucumber, shallot, and olives. Give it a good stir. Crumble the feta cheese right into the bowl and mix well.
In a small bowl, whisk the oil, zest, lemon juice, vinegar, salt, and pepper. Pour over salad and mix well.
