Pasta in Creamy Pistachio Sauce

 This is absolutely DELICIOUS! The pistachios give the sauce such an amazing, unique flavor. This is one of our favorite family dishes. I served ours with some juicy pork chops and they were just perfect. So, so good! Enjoy!
Ingredients:
-16 oz small pasta (shells, rotini, etc)
-2 Tbs extra virgin olive oil
-1 small onion, finely chopped
-1 cup shelled pistachios, roughly chopped (in food processor), divided
-1 cup heavy cream
-1/2 cup milk (at least 2%)
-1 tsp crushed red pepper flakes
-1/2 tsp salt
-1/2 tsp pepper
Directions:
Cook the pasta according to the package directions. Drain when done.
Meanwhile, heat the oil in large skillet (a wok works great for this). Add the onion and cook for about 5 minutes. Add 3/4 cup of the chopped pistachios. Mix well and cook for 1-2 minutes.
Stir in the cream and milk. Mix well and bring to a simmer. Simmer, stirring often, for 10 minutes.
Season with the pepper flakes, salt, and pepper. Give it a good stir, then add the cooked and drained pasta.
Serve immediately and sprinkle with remaining chopped pistachios. YUM!
