Slow Cooker Potato Soup
Easy and so delicious! This soup is perfect on a cold winter day. Enjoy!
-4 cups chicken broth
-28 oz frozen shredded hash brown potatoes
-1 small onion, finely chopped OR a handful of dehydrated onion
-2 garlic cloves, minced
-1 tsp salt
-1/2 tsp pepper
-1 (8 oz) package cream cheese, at room temperature
-1 cup heavy cream
-shredded cheddar, for garnish
-real bacon bits, for garnish
-chopped chives, for garnish
Directions:
In your slow cooker, combine the broth, frozen hash browns, onion, garlic, salt and pepper. Stir, cover and cook on LOW for 6 hours.
Drop bits of the cream cheese (use the whole block) in the hot soup and mix well. Stir in the cream
Cover and cook on LOW for another 30 minutes.
Stir, ladle into bowls and serve with shredded cheese, bacon bits and chives. Enjoy!
