Happy Cheesy Chicken
This chicken is absolutely amazing! It's super easy to make and very, very tasty. The chicken is tender, cheesy and packed with flavor. So good! We like ours with rice. Enjoy!
Ingredients:
-3 large chicken breasts, skinless, boneless
-1 (8 oz) block Swiss cheese
-1/2 cup flour
-1 Tbs smoked paprika
-1/2 tsp salt
-1/2 tsp pepper
-1/2 stick butter
-1 cup white cooking wine
-1 cup red cooking wine
-2 chicken bouillon cubes
-toothpicks
-cooked rice
-parsley (dried or fresh), for garnish
Directions:
Cut the chicken breasts into halves and pound with the meat mallet until thin.
Cut the block of cheese into 6 equal sizes.
Place one chunk of cheese onto one thinned half breast. Roll the chicken around the cheese and secure with a toothpick. Repeat with remaining chicken and cheese.
In a shallow bowl, mix the flour, paprika, salt and pepper. Mix well, then dredge the prepared chicken.
Melt the butter in large skillet.
Brown the chicken into the melted butter.
Once the chicken is browned on all sides, add the wine and bouillon cubes. Bring to a simmer. Lower the heat, cover and cook for 20 minutes. Uncover and cook for another 10 minutes.
Serve immediately over rice and garnish with some parsley. Remove the toothpicks and enjoy! YUM!
