Ham and Cheese Pasta Salad
We love pasta salads of all sorts. Here's yet another one that's super easy to put together. The dressing is fantastic and we love the crunch of the veggies. So yummy! Enjoy!
For dressing:
-6 Tbs extra virgin olive oil
-6 Tbs red wine vinegar
-1/4 cup sour cream
-1 Tbs Dijon mustard
-salt and pepper to taste (start with 1/2 tsp each)
-1 tsp chopped chives
-1/2 tsp dried dill OR 1 Tbs fresh dill, finely chopped
For salad:
-1 lb small pasta (rotini, ziti, bow tie, shells, etc) cooked, drained and rinsed in cold water
-10 oz angel hair coleslaw (very finely shredded cabbage)
-1 green bell pepper, seeded, halved, then thinly sliced
-2 cups cubed ham
-6 slices good cheddar cheese, halved and thinly sliced
Directions:
Place all of the dressing ingredients in the salad bowl. Mix very well. Add remaining ingredients, mixing as you add them. Give it one final good toss, making sure that all is covered with the dressing. Serve and enjoy. YUM!
