Pan Seared and Roasted Pork Chops
We love pork chops and have them fairly often for dinner. This is one of my favorite ways to make them. They come out nice and juicy, and so full of flavor. I use the very thick Costco chops, so if you're using thinner chops, make sure to lower the amount of roasting in the oven so that they don't get dry. Of course, pork chops go great with some homemade mashies. Enjoy!
Ingredients:
-olive oil flavored cooking spray
-1 Tbs seasoned salt, divided
-1 Tbs garlic powder, divided
-2 tsp pepper, divided
-4 thick pork chops, boneless, trimmed of fat
Directions:
Preheat oven to 400 F.
Generously coat a large skillet with olive oil cooking spray. Sprinkle on top with half of the seasonings (make sure to distribute them evenly). Heat it up.
Once the pan is nice and hot, add the pork chops, trimmed of fat. Quickly spray the top of the chops with cooking spray and season with remaining spices. Sear quickly on both sides until they're nice and golden brown. The chops will not be fully cooked at this time and that's ok.
Once they're golden brown on both sides, place the skillet in the preheated oven. Roast pork for 15 minutes.
Remove skillet from oven and let the chops rest for 5 minutes. Serve over mashies and enjoy! YUM!
