Instant Pot Pasta and Shrimp in a Creamy Sauce
So easy and so delicious! This dish is soul food for sure. The flavors are just wonderful and you can easily adjust the level of desired spiciness (more or less crushed red pepper flakes). Serve with a side of veggies and you have a fantastic meal! Enjoy!
Ingredients:
-1 Tbs extra virgin olive oil
-3 garlic cloves, minced
-1 tsp paprika
-1 lb dry spaghetti, broken in half
-4 cups water
-3/4 cup mayonnaise
-3/4 cup Thai sweet chili sauce
-1 small lime, juiced
-1 tsp (or more) crushed red pepper flakes
-2 Tbs dried chopped chives
-1/2 tsp salt
-1/2 tsp pepper
-12 oz medium shrimp, peeled, deveined, with tails removed
Directions:
Set your IP on saute and pour in the oil. Add the garlic and paprika and cook for 1 minute.
Turn off IP. Add the broken spaghetti and the water. Give it a stir, so that pasta can be covered by the water (it's ok if it's not completely covered).
Place the lid on with the vent in the sealed position. Set the IP to manual on HIGH pressure for 4 minutes.
Do a quick release.
In a bowl, quickly whisk together the mayo, chili sauce, lime juice, red pepper flakes, chives, salt and pepper. Pour this goodness over the pasta.
Place the IP on saute and add the shrimp. Give it one good stir and cook for a couple of minutes or until shrimp is nice and pink. Enjoy!
