Instant Pot Buffalo-Ranch Chicken and Pasta
Ingredients:
-4 chicken breasts, boneless, skinless, cut into chunks
-3 cups water, divided
-1/4 cup hot sauce (we prefer Louisiana style)
-8 oz cream cheese, at room temperature
-1 cup ranch dressing
-1 lb pasta (we like garden rotini, but any will do just fine)
-1/2 cup shredded mozzarella cheese
-real bacon bits, for garnishing
Directions:
Place chunks of chicken, 1 cup of water, and hot sauce in your Instant Pot. Give it a stir. Place the lid on top, with the valve in the sealed position. Cook on HIGH pressure manual for 12 minutes.
Do a quick release.
While the IP is doing its thing, mix together the softened cream cheese with the ranch. Pour this over the chicken and give it a stir. Add the pasta and remaining 2 cups of water. Stir. Secure the lid on top with the valve in the sealed position.
Cook on HIGH pressure manual for 4 minutes. Do a quick release. Turn off the IP.
Remove the lid and sprinkle the cheese right on top. Place the lid back on for a couple of minutes to allow the cheese to melt nicely.
Scoop goodness onto plates and garnish with real bacon bits. Enjoy!
