Instant Pot Cajun-Alfredo Chicken with Pasta
So easy, so quick, and so yummy! Have I mentioned how much I love my Instant Pot? My kids think it's magical because food cooks so fast in it. :) This dish is just wonderful, with the flavors combining beautifully. Delicious! Enjoy!
Ingredients:
-butter flavored cooking spray
-5 chicken breasts, skinless, boneless, cut into chunks
-2 tsp garlic powder
-2 Tbs Cajun seasoning, divided
-1 lb pasta (any kind works; we like garden rotini)
-3 cups water
-1 large egg
-1 cup heavy cream
-6 oz shredded Parmesan cheese
-3 Tbs butter, melted
-1 cup Italian style panko crumbs
Directions:
Coat your IP with butter flavored cooking spray. Set on saute. Add the chicken chunks and season with the garlic powder and 1 Tbs of the Cajun seasoning. Give it a good stir and brown it a little. Turn IP off. Add the pasta and water.
Stir. Cover and set the valve in the sealed position. Cook on manual HIGH pressure for 4 minutes. Do a quick release.
Quickly beat the egg and mix it with the heavy cream. Set the IP on saute. Pour the egg mixture on top and stir. Turn IP off and stir in the cheese.
Pour all that pasta and chicken goodness in a 9x13 pan.
Set your oven to broil. Mix the melted butter, panko crumbs and remaining Cajun seasoning. Sprinkle over pasta mixture.
Broil for 1 minute. Keep an eye on it because it will brown very quickly.
Remove from the oven, scoop onto plates and enjoy!
