Fresh Strawberry Cobbler
It's definitely fresh fruit cobbler season and I love it! I mean, I love cobblers year round using canned fruit, but there's something extra special about using fresh fruit. This is super easy to make and very delicious! We love having this with French vanilla ice cream and chocolate syrup on top. YUM! Enjoy!
Ingredients:
-baking cooking spray (the one with flour and butter in it)
-2 lbs fresh strawberries, cleaned and cut into chunks
-1 cup sugar
-1 Tbs cornstarch
-2 Tbs lemon juice
-1 1/2 cups flour
-1/3 cup sugar
-1/3 cup packed brown sugar
-1/2 tsp salt
-1 1/2 tsp baking powder
-1 stick (1/2 cup) unsalted butter, at room temperature
-1/3 very hot water from the tap
Directions:
Preheat oven to 375 F. Coat the bottom of 9x13 pan with the baking spray. Set aside.
In a large bowl, mix the strawberries, sugar, cornstarch and lemon juice. Mix very well and let it sit for about 10 minutes or as long as it takes you to make the topping.
In your electric mixer bowl, using the paddle attachment, mix the flour, sugar, brown sugar, salt and baking powder. Once well mixed, add the butter and beat until looking crumbly. Add the very hot water and mix until pasty.
Pour strawberry mixture into prepared pan. Spoon topping right on top-try to spoon it as evenly as possible.
Bake in preheated oven for about 40 minutes, until topping is golden brown and the toothpick comes out clean.
Remove from the oven and let it sit for 5 minutes. Scoop into bowls and top with ice cream and chocolate sauce or enjoy as is. YUM! Enjoy!
