Mushroom and Artichoke Soup

Easy, hearty and absolutely delicious. This soup is amazing year round. Enjoy!
Ingredients:
-1/4 cup (1/2 stick) butter
-1 bunch green onions, cleaned and chopped
-2 carrots, peeled and shredded
-6 oz baby bella mushrooms, roughly chopped
-1 bay leaf
-1/2 tsp thyme
-1/2 tsp oregano
-a dash of cayenne pepper
-4 cups chicken broth
-14 oz marinated artichoke hearts, drained and chopped
-3 Tbs flour
-1 cup heavy cream
-1/2 tsp salt
-1/2 tsp pepper
Directions:
Melt butter in large pot. Add the onions, carrots, and mushrooms. Saute for 5-6 minutes or until the veggies are nice and soft.
Add the bay leaf, thyme, oregano, cayenne, broth and artichoke. Give it a good stir. Bring to a simmer. Cook for 20 minutes, stirring occasionally. 
Remove the bay leaf.
Ladle about a cup or two of the liquid from the soup. Whisk in the flour. Once smooth, add it to the pot. Give it a really good stir. Add the cream, salt, and pepper. Cook for about 5 more minutes.
Ladle that goodness into bowls and enjoy! YUM!
