Emeril's Spaghetti with Caramelized Onions and Anchovies

 This is authentic pasta. This is serious comfort food. The flavors are out of this world delicious! So, so good! Enjoy!
Ingredients:
-1 lb spaghetti
-reserve 1 cup of the pasta water
-1/3 cup extra virgin olive oil PLUS 1/4 cup, divided
-2 Tbs unsalted butter
-4 onions, halved and thinly sliced
-5 large garlic cloves, thinly sliced
-2 (2 oz each) cans flat anchovies in olive oil, drained 
-1.5 tsp salt
-1 tsp pepper
-2 Tbs fresh chopped parsley
Directions:
Break the pasta in half and cook for 9-10 minutes. Drain and reserve 1 cup of the pasta water. 
While the pasta is cooking, heat up 1/3 cup of the oil along with the butter. Add the onion and cook until caramelized, about 20 minutes.
Add the onion and anchovies. Give it a good stir and cook for about 3 minutes. The anchovies will break apart as they cook. 
Stir in the drained spaghetti and reserved cup of pasta water. Season with the salt and pepper. Give it a good stir. Finally, add the 1/4 cup of the oil and parsley. Give it one more good stir. 
Serve immediately and enjoy. YUM!
