Cowboy Beans
This is another super easy and delicious meal, perfect on a cold winter's night. It's hearty and packed with flavor. It goes perfectly with my buttery cornbread. So yummy! Enjoy!
Ingredients:
-1 lb bacon, chopped
-1 onion, finely chopped
-1 (16 oz) Polska Kielbasa, halved lengthwise and sliced
-1 (15 oz) can original baked beans
-1 (15 oz) can dark kidney beans, rinsed and drained
-1 (15 oz) can large butter beans, rinsed and drained
-1/2 cup ketchup
-1/3 cup packed brown sugar
-2 tsp yellow mustard
-2 tsp apple cider vinegar
-1/4 tsp salt
Directions:
Add bacon to hot wok or large pan. When is about halfway browned, add the onion and kielbasa. Cook for 5 more minutes or until onion is tender.
Add remaining ingredients and give it a really good stir. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve and enjoy! YUM!
